Vegetable soup is one of those comfort foods that I never fail to pass up, especially during the cold season. I made some for my family when we got sick a couple of weeks ago and it was the perfect pick-me-up for us. The best part about making vegetable soup is that you can use whatever vegetables you have on hand, which gives you the freedom to get creative.
Prep Time: 10 minutes (chopping onion, celery, carrots, broccoli, potatoes)
Cook Time: 45 minutes
You Will Need:
- Large Pot, Water, Potatoes, Carrots, 1 Onion, Celery, Corn and Peas, Broccoli, Ramen Noodles (just the noodles), Cumin, Salt, All-Spice, Black Pepper, Olive Oil/Butter
In a large pot, saute chopped onions and celery until half cooked. Stir in carrots, broccoli, and potatoes add some salt and saute for 10 minutes. Add in 4-6 cups of water, bring to a boil and cook for 10 minutes. Turn the heat on low and cook for 20 minutes, or until potatoes are cooked. Break up the Ramen noodles and add them in, along with your corn and peas. Add salt, black pepper, all-spice, and a little bit of cumin and stir. Cook for additional 5-10 minutes, and you’re done!
